The harvest is exclusively done by hand, at the end of autumn when the very ripe grapes are affected by noble rot - botrytis cinerea -.

The grapes then very concentrated in sugar by this natural phenomenon are selected then delicately pressed. The fermentations are slow and the aging on fine lees of 8 months minimum, gives the wine the fat, the intense and complex expression of the greatest White Fluffy - sweet wines.

The wine once bottled aged patiently in cellar 2 years before being marketed. Straw yellow dress. Very expressive, the nose exhales aromas of quince, exotic fruit and candied.  In the mouth a strong personality, the structure and sugars form a good marriage. A late harvest faithful to the soil.

Produced late in the season, these over-harvested grapes produced a mellow wine that develops seductive aromas and notes of candied fruit. To serve in exceptional circumstances. To their aromatic character is added the power due to the phenomenon of concentration. Such wines are enjoyed alone, with foie gras or smoked salmon, as well as with certain desserts.
